Creating a Flatbread Roasted Vegetable Pizza

The Starrett Judo Club’s Coach Legros and Garden Educator, Jacqui Roytman have teamed up to teach the Judokas (judo students) easy, simple cooking lessons that have nutritional value.

The students and their parents have participated in a number of these sessions with Coach Legros and Roytman where they are not only learning to cook, have fun and learn nutritional content of the foods they are creating with their parents, but in essence having some quality time with their parents.

In last week’s lesson the students created their very own Flatbread  Roasted Vegetable Pizza. The students used the following ingredients:

  • Broccoli
  • Onion
  • Vegan Shredded cheese
  •  Garlic
  • Olive Oil
  • Fresh Basil
  • Legros’ Spices
  • Vegan Veggie Patties
  • Flatbread – A few suggestions for healthy brands are: Stonefire authentic flat bread, Flatout’s Foldit 5 Grain Flax Flatbread

Tomato Sauce (Vegan Marinara)

  • 2 tablespoon olive oil
  • 2 garlic cloves
  •  I-28 ounce can of crushed tomatoes
  • Veggie Patties

Legros instills into the youngster’s minds that they must always wash their hands before starting to cook and that they also must dry their hands too.

The students and their parents preheat the oven to 350 degrees. First, they cut the onion up finely, and then they dice four cloves of garlic finely and put the olive oil into the saucepan and then sauté it.

Legros warned the students to not overcook the garlic, but cook it slowly. Add in the vegetarian meatballs to the onion and garlic and cook them together. You need to stir it. You will then pour a jar of sauce into the pot, and let the pot simmer very gently.

Roytman suggested adding delicious veggies, such as broccoli, zucchini, and summer squash. After slicing these vetatables into smaller piece, boil the water and add the broccoli and blanch it so it is partially cooked and then mash up the meatballs and place them into the sauce.

It wouldn’t be a Legros based recipe if we don’t add some of his favorite spices: Celtic Sea Salt, Turmeric, Black Pepper, Garlic powder, Cayenne Pepper, and after each spice you need to stir them into the pot. (Don’t forget to wash your hands after using the Cayenne Pepper!  Then students put aluminum foil on a cookie sheet and take two pieces of the flatbread and place them onto the cookie sheet, add the marinara sauce, then add the vegetables (broccoli, mushrooms, etc.), then add the vegetarian mozzarella shredded cheese (this will enhance the flavor) and top it off with fresh basil and place it into the oven for ten minutes.

After the Flatbread Roasted Vegetable Pizza is cooked, the judokas showed off their creations. And were ready to enjoy their dinner!
