Maple Pecan Graham Cookies

These tasty (and easy) cookies will have you and anyone else who tries them smiling from ear to ear! Isn’t it great that we can celebrate a New Year’s resolution to eat healthier with a cookie?

1/4 cup reduced-calorie margarine or butter

Sugar substitute to equal 1 1/4 cups sugar, suitable for baking

1 egg or equivalent in egg substitute

1 1/2 teaspoons vanilla extract

2 tablespoons sugar-free maple syrup

3/4 cup all-purpose flour

6 tablespoons purchased graham cracker crumbs

1 teaspoon baking powder

1/4 cup chopped pecans

  1. Preheat oven to 400 F. Spray three baking sheets with butter-flavored cooking spray.
  2. In a large bowl, combine margarine and sugar substitute. Stir in egg, vanilla extract and maple syrup. Add flour, graham cracker crumbs and baking powder. Mix well to combine. Fold in pecans. Drop by teaspoonful onto prepared baking sheets to form 36 cookies. Flatten cookies with a fork.
  3. Bake for 5 to 7 minutes or until light golden brown. Remove cookies from baking sheets and place on wire racks to cool. Makes 12 (3-cookie) servings.

Each serving equals: 92 calories, 4g fat, 2g protein, 12g carb., 124mg sodium, 1g fiber; Diabetic Exchanges: 1 Fat, 1/2 Starch.
