On August 16th, Spring Creek Senior Partners’ (SCSP) Garden Club held a farewell summer party in the Spring Creek Recreational Fund’s (SCRF) Urban Garden Classroom (UGC). The event culminated the summer sessions at the UGC with Garden Educator, Jacqui Roytman.
The celebrants commemorated their experience at the garden by cooking various dishes with the vegetables they harvested from the UGC. One senior made fried green tomatoes from the fruit he harvested, while another brought a baguette and made their own pesto sauce from the basil leaves grown in the herbal garden bed. Roytman cooked her infamous eggplant parmesan using fresh eggplant and cherry tomatoes harvested from the UGC.
SCSP Director Theodora Ziongas is grateful for the wonderful opportunity for the seniors to learn about healthy eating and to participate in enjoyable activities at the UGC. “We are very fortunate to have such a wonderful educational garden right in our community. Seniors who participated were very enthusiastic and committed; they learned a lot. Jacqueline Roytman has a wealth of knowledge and creative ideas. Gardening is not only great exercise, it bring people together and encourages healthy living far beyond the hours spent in the garden,” Ziongas said.
The fun gathering felt very much like a beautiful family affair. Everyone laughed, ate their fill of freshly cooked food and reminisced about all they experienced over the summer.Sheila Pinder thoroughly enjoyed her experience at the UGC. “I learned a lot of things I never knew about. All of the recipes and gardening facts that Jacqui tells us is so interesting, and when I get home I go online and look them up. I’ve really learned so much,” Pinder said.
